D’s Momos

Ds momos



Ginger garlic shredded red cabbage, shredded carrot( by hand!!! By D!!! That is artwork if you know what I mean. Note - This is not a lazy recipe) finely sliced green beans

In a wok, sesame oil, heat. Put ginger, garlic, toss veggies in. Generous amount of soy sauce, curls of jaggery, splash of vinegar, black pepper...Always! Ideally, spring onions. Hot sauté all. Take off heat. Add coriander. Filling done.



Wrap
Maida ( Flour), a tsp of rice flour. Salt. Few drops of oil. Add hot water. Lightly bind. Don’t knead much coz the gluten should not be activated too much. Let dough rest for an hour (like I was saying.... not lazy)

Make momos.. Roll out Goli sized dough into thin discs. Fill filling. Shape (by design or default) personalised momos.


Preferably rolled out with a spot of Spotify and resulting aerobics. 

Give them a steam room for about 7 mins

Gajar Halwa

Gajar halwa

Ok Ro... this ones for you and the winters. And I guess it’s good trek food in a dabba.

So you get the orange carrots and you get the winter carrots (reddish orange and the purple ones). Halwa works best with the winter carrots.

Hardest bit of the prep is the grating. Lazy way out is to peel and chunk and coarse grind in a mixie.

Ok microwave version
Put the grated carrots Ina bowl. Add milk half way to the top. And micro for 10. Stir. Micro for another 10 or 20 till quantity reduces and milk evaporates. 

Now add powdered cardamom and sugar and cook till sugar melts and continue cooking till it reduces a bit. Watch out. Stir in between. It could get burnt caramelised. 

Add flakes of almonds, dollop of ghee, and khoa. OR add some milk powder and cook a bit ( this works well and makes the halwa rich and creamy) 


Note - you guys like the the non khoa/ non milk additive version better but with extra almonds, walnuts, milk powder, this would make good trek food
